Rocket & Walnut Pesto Pasta

Product Description

Chargrilled courgette and pepper, with a rocket and walnut pesto served with penne pasta

Ingredients Included (double for four person):

  • 1 Red Pepper
  • 1 Courgette
  • Rocket leaves
  • 1 clove of garlic
  • Hard Cheese
  • Extra Virgin Olive Oil
  • 10 Walnut halves
  • Penne Pasta
  • Spaghetti Pasta
  • Vegetarian Parmesan Cheese

Not Included:

  • Oil for frying
  • Salt

 

Meal

  1. Cook the pasta by placing in a pan and cover with boiling water and simmer for 12 minutes or until cooked, then drain.

  2. In a blender or a pestle & mortar add a handful of the rocket leaves, 6 walnut halves, garlic, grated cheese, oil and a pinch of salt. Blend or crush until all the ingredients are combined into a paste.

  3. Add a little oil to a frying pan and heat on high. Add the courgette and pepper, stirring occasionally. Cook until the edges of the peppers and courgette begin to char and the vegetables soften.

  4. Take the frying pan off the heat and add the pesto.

  5. Take a handful of the fresh rocket leaves and add to the pan with the pesto and stir.

  6. Add the pesto mixture to the cooked pasta & stir so the pasta is well coated with the pesto.

  7. To serve, place the pasta in a pasta bowl, add the fresh rocket leaves on top and sprinkle the remaining chopped walnuts.
