Dal
  1. Measure out the three dals and add to a bowl. Wash in at least three changes of water.
  2. Add the washed dal to wok to a large saucepan or wok. Add 1 litre of water and gently simmer. Add 1/2 teaspoon of tumeric. Use a spoon to scoop off any 'scum' that floats to the top Cook for 45minutes to 1 hour until the dal is soft Use a fork to gently mash the dals. Add one teaspoon of salt & stir
Tarka
  1. In another frying pan, heat 2 tablespoons of vegtable oil until hot. Add the 2 dried chillis, the cumin, the mustard seeds and the asafoetida. Cook until the dried chillis start to turn black in colour.
  2. Remove the spices of the heat and add directly to the cooked dals. Stir well and put a lid on, to keep the aromas in the dal. Ready to serve with rice or a chappati.
